Vegan Chocolate-Raspberry Pudding

I’m so excited to share this recipe with you all! My boyfriend LOVES chocolate pudding so I had to find a non-dairy replacement for it. As usual, I looked at my fridge and threw some ingredients together in my food processor and hoped for the best. Luckily it turned out amazing! This is a brilliant alternative for the dairy version, minus the cruelty and loaded with protein and antioxidants! I’ve also been loving these freeze dried raspberries as natural sprinkles, aren’t they gorgeous? 😍

Ingredients:

⌁1 block silken tofu

⌁1/2 bar melted non-dairy chocolate

⌁1 tbs cocoa powder

⌁5 raspberries

⌁1/2tsp vanilla extract

⌁1 tbsp of maple syrup

⌁pinch of salt

⌁fresh and dehydrated raspberries to top (optional)

Method:

Throw all ingredients excluding the toppings into a food processor until smooth.

Pour into ramekins and refrigerate for 2 hours.
