This recipe is guaranteed to make your dinner table look 10 times prettier! When I saw the purple sweet potatoes at my local asian market, I knew I had to make it into a pretty hummus.
⌁2 cups mashed purple sweet potato
⌁2 cups chickpeas
⌁3 tbsp tahini
⌁2 cloves of garlic
⌁the juice of 2 lemons
⌁2 tbsp olive oil
⌁1/2 tsp cayenne pepper
⌁1/2 tsp paprika
⌁1/2 tsp cumin
⌁1 tsp salt
⌁2 tbsp water
⌁1/2 pomegranate to garnish (optional)
Boil, peel and mash the sweet potatoes.
Add them to a food processor with the chickpeas, tahini, garlic, lemon juice, spices, water and olive oil.
Add the seasonings to taste and garnish with olive oil, some coriander and pomegranate!
Serve with warm khobez or pitta bread and enjoy.
