Being plant-based doesn’t mean you have to miss out on all of the Summer BBQ fun. Quite the opposite actually – you can get creative with what you decide to put on the grill!
These black bean and mushroom burgers are meaty, flavourful and loaded with plant based protein and iron. What’s not to love?
⌁2 cups mushrooms of your choice, very finely diced (I used true morels but any mushroom will work)
⌁1/2 a large onion, very finely diced
⌁4 large cloves of garlic, very finely diced
⌁1 tbsp olive oil
⌁1 tsp paprika powder
⌁Cayenne pepper to taste
⌁2.5 tbsp Maggi liquid seasoning
⌁2 bay leaves
⌁500g black beans
⌁265g white beans
⌁1 tsp tomato paste
⌁juice of half a lemon
⌁3 tbsp vegan bacon bits (optional, you can also use crispy fried onions)
⌁1/2 cup breadcrumbs
⌁1 tbsp flour
⌁2 tbsp egg replacer or 2 flax eggs
⌁Salt to taste
⌁Olive oil to fry
In a large pan place your olive oil, onion, garlic and mushrooms and fry until the liquid is released and they are starting to brown. Next, add your bay leaves, Maggi seasoning, tomato paste, paprika powder and cayenne powder.
In a food processor, add your black beans, white beans along with a little bit of water and blend until creamy. Add this mixture to the pan and combine with the previously cooked mushroom mixture.
Cook for another 5 minutes and remove from the stove.
Remove the bay leaves from the mixture.
In a bowl, combine your bean and mushroom mixture with the breadcrumbs, flour, egg replacer and lemon juice and mix well. Taste and add salt if needed (this will depend on the vegan bacon bits or crispy fried onions’ salt levels).
Form the dough into patties and fry in an olive-oiled pan until golden on both sides.
You can now enjoy the burgers as they are or you can grill them! The pan frying holds them together and the grilling gives them that smokiness we all love.
My favourite sauce to make with these burgers is vegan sriracha mayo. Simply combine 1 tbsp of vegan mayo with 1 tsp or sriracha and mix. Top the burgers with this sauce and mashed avocado and rocket.
