I couldn’t believe my taste buds when I took the first sip of this vegan eggnog, as it tastes better than I remember the original to taste like!
It is sweet, spiced and creamy – and just SO Christmassy.
This year I am hosting my very first Christmas dinner with my family and this will definitely be on the menu.
The best part: this eggnog is loaded with nutrients and good fats so it’s actually good for you!
To make it a little bit naughtier – but also tastier – add in a shot of rum or brandy. In the famous words of Donna Meagle: Treat yo’ self!
Without further ado, here is your new favourite holiday drink recipe!
⌁2 cups unsweetened plant milk
⌁2 tbsp cashew butter
⌁2 pitted dates
⌁2 tsp cinnamon
⌁1/2 tsp vanilla paste
⌁1 tsp agave nectar (optional)
Add all of the ingredients into a high speed blender or food processor, and blend until it is very smooth and creamy. This may take up to 2 minutes or so due to the dates. If you don’t have a powerful blender, you can also pre-soak the dates for a few hours ahead of time.
If you are using unsweetened plant milk, add in the agave nectar, but it is not necessary to do this if you are using sweetened plant milk as the dates add enough sweetness.
For a little naughty twist, add a shot of brandy or rum to your vegan eggnog and serve it over ice.
Top with a sprinkle of cinnamon to finish and enjoy!
