This pasta dish is the perfect alternative to your mid-week pasta dinner. It is quick to make, healthy and SO flavourful.
This avocado sauce can also be used as a dressing or sauce for salads, baked potatoes or crudités.

Avocado Pasta With Smokey Spiced Mushrooms
Ingredients
- For the pasta:
- 200g chickpea or red lentil pasta
- 100g mushrooms
- 1/2 tbsp oil
- 2 drops liquid smoke
- 1 tsp garlic powder
- 1/2 tsp paprika powder
- 1tbsp soy sauce
- 100ml plant based milk
- 2 avocados
- 1 tsp garlic powder
- 1/2 tsp black pepper
- Juice of 3/4 a lemon
- 1 tbsp chopped fresh parsley
- 1/2 tsp salt
- 1 tbsp nutritional yeast flakes
- 2 tbsp water

Directions
- Boil the pasta according to package instructions and drain.
- Chop the mushrooms and fry them in a pan on high heat with the oil, liquid smoke, soy sauce, paprika and garlic powder until they are browned and fragrant.
- Add the flesh of two avocados to a blender along with the garlic powder, black pepper, lemon juice, fresh parsley, salt, nutritional yeast flakes and water and blend until you have a creamy sauce.
- Assemble the dish by placing the pasta in a bowl, then top it with the sauce and mushrooms, followed by some chilli flakes (optional).
