This chia pudding tastes like a decadent dessert, but is actually good for you!
Have it for breakfast with some fresh fruit, or make it as a dessert, topped with fresh fruit and chocolate. It is also a perfect meal prep item as it can keep in the fridge for a few days in a sealed jar.
Chia seeds contain omega-3 fatty acids, are rich in antioxidants, and they provide fibre, iron, and calcium. In addition to the protein from the soy milk and healthy fats from the blanched almond butter, this chia pudding is the perfect example of a healthy sweet treat that doesn’t suck.
Decadent Almond Chia Pudding
- 1 3/4 cups soy milk
- 1/2 cup chia seeds
- 2 tbsp maple syrup
- 1/2 tsp vanilla powder
- 1/4 tsp sea salt
- 2 tbsp blanched almond butter (the light variety)
- Toppings of choice
- In a large mason jar, combine the chia seeds with the soy milk, maple syrup, salt, vanilla powder and blanched almond butter and stir well to combine.
- Refrigerate for 1 hour and stir again. Place it back in the fridge for 5 more hours or overnight.
- Spoon the chia putting into 4 containers and top with toppings of choice. I personally like adding more blanched almond butter and fresh fruit.
